Vegan Garlic Sesame Soba Noodles

Ingredients:

Spelt Soba Noodles

2 Tbsp Brag's Liquid Aminos

1 Tbsp 100% Pure Maple Syrup or Agave Nectar

3 Garlic Cloves

1 Tsp Ground Ginger

1 Tsp Onion Powder

1 Tsp Ground Pepper

2 Tsp Grapeseed Oil

Toasted Sesame Seeds

1/2 tsp Raw Ginger Root

1 Cup Raw Spinach

Instructions:

Cook Soba Noodles until al dente, strain noodles and put to the side (keep the noodle water for sauce)

Finely chop garlic cloves and grate ginger root; set to the side

In a skillet, coat pan with Grapeseed Oil and sauté garlic and grated ginger until lightly caramelized

Add liquid aminos (with this, no salt is needed), maple syrup, ground pepper, ground ginger, onion powder and bring to a light simmer

Add 2 Tbsp of the spelt noodle water to sauce mixture and toss noodles directly into mixture until evenly coated with sauce

Add one cup of raw spinach and toss until cooked in with soba noodles and sauce

Remove from heat and sprinkle toasted sesame noodles directly on your dish

Enjoy!
